Good Eats: Bison Burger Recipes

We are back with another Good Eats concept and recipes from Duluth Pack, and we believe that it’s time for ground beef to step aside and let bison protein take it away. Bison burgers are juicy, flavorful, and will take the summer of 2022 by storm. If you are reluctant to tear yourself away from the traditional burger, we understand, but sometimes it’s good to switch things up from a regular beef burger recipe, so we’re making a case for the best bison burgers around!  

Best-Ever Bison Burgers 

Ground bison meat is a naturally lean alternative that packs a ton of flavor when compared to ground beef, and if you’ve heard rumors that bison tastes gamey, we have good news for you – it doesn’t. You won’t get a gamey aftertaste with bison burgers but instead a thick, juicy burger with less guilt. So, whether you’re trying to eat a little healthier this year or yearning to try something new, bison burgers are a great place to start. This recipe was created by Delish

Ingredients – For the Burgers  

  • 2 lb. ground bison  
  • 1 tbsp. Worcestershire sauce  
  • ½ shallot, finely chopped  
  • 2 cloves garlic, minced  
  • 1 ½ tsp. Kosher salt  
  • ½ tsp. Black pepper  
  • ½ tsp. Coriander  
  • ½ tsp. Ground mustard  
  • 2 tbsp. Butter  
  • 2 large onions, thinly sliced  
  • 8 slices of white cheddar cheese  
  • 8 hamburger buns  
  • Romaine lettuce, for serving  

Ingredients – For the Sauce  

  • ½ cup mayonnaise  
  • 1 tbsp. Dijon mustard  
  • ½ tsp. Dried oregano  

Directions  

  • In a large bowl, combine bison, Worcestershire sauce, shallot, garlic, salt, pepper, coriander, and ground mustard. Form into 8 patties that are slightly larger than your hamburger buns. Let sit at room temperature for 30 minutes.  
  • In a large skillet over medium heat, melt butter. Add onions and cook, occasionally stirring, until golden, about 20 minutes. Remove from skillet and place on a plate and tent with foil to keep warm.  
  • Return skillet to heat and cook patties for 3 minutes, flip, add cheese and cook for 3 more minutes for medium. Work in batches as necessary. Place patties on a cutting board and let rest for 5 minutes.  
  • In a small bowl, combine mayonnaise, Dijon mustard, and oregano. Spread mixture on bottom buns, top with romaine, burgers, caramelized onions, top buns, and enjoy!  

Grilled Bison Burgers  

This recipe from AllRecipes is sweet, simple, and only takes 20 minutes to make! It’s the perfect dish for a summer evening spent with friends and/or family, and the smell will leave your mouth watering for hours. Here is a recipe for Grilled Bison Burgers:  

Ingredients  

  • 1 pound ground bison  
  • ½ cup panko breadcrumbs  
  • 1 egg 
  • 3 tablespoons Worcestershire sauce  
  • 4 dashes of hot sauce (such as Tabasco) 
  • 1 pinch granulated garlic  
  • 1 pinch of ground black pepper  
  • Olive oil cooking spray  
  • 4 slices of American cheese  
  • 4 hamburger buns, split and toasted  

Directions  

  • Preheat an outdoor grill on high heat and lightly oil the grate. 
  • Mix bison, panko crumbs, egg, Worcestershire sauce, hot sauce, garlic, and pepper together by hand in a bowl; form into 4 patties. Place patties on a baking sheet, cover with aluminum foil, and refrigerate until chilled, about 15 minutes.  
  • Spray patties with cooking spray and grill until hot and slightly pink in the center, about 5 minutes per side. Top each burger with a slice of cheese; continue cooking until the cheese melts, about 2 minutes more (an instant-read thermometer inserted into the center should read 140 degrees F).  
  • Sandwich burgers between bun halves and indulge!  

Garlic and Jalapeño Bison Burgers  

If you are someone who likes your burger with a little kick, then this recipe from PrimalPalate is the one for you! Dress the burger with some big, fresh lettuce leaves, and you’ll have a cookout favorite in your hands!  

Ingredients  

  • 1 lb. Ground bison  
  • 1 tsp black pepper  
  • 1 tsp salt  
  • 2 jalapeños, seeded and minced  
  • 1 tbsp sun-dried tomatoes  
  • 5 cloves garlic, minced  

Directions  

  • Preheat the grill to medium-high heat.  
  • Combine ground bison, jalapeños, garlic, salt, and pepper in a large mixing bowl. Form ground meat and spices into 4 equal-sized patties.  
  • Place burger patties on the grill and cook for 4-5 minutes per side.  
  • Remove from the grill, top with sun-dried tomatoes and serve.  

Buffalo Bison Burgers  

Fire up the grill for these ultimate and spicy buffalo bison burgers. This recipe from PrimalPioneer will leave you questioning why you didn’t make the switch from ground beef to lean, flavor-packed ground bison sooner!  

Ingredients  

  • 6 – 1/3 patties The Honest Bison bison burgers  
  • ½ cup blue cheese crumbles, divided  
  • 2/3 cup buffalo hot sauce, divided  
  • ½ tsp celery salt  
  • 2 celery ribs, finely chopped  
  • 1 tsp red pepper flakes 
  • 6 brioche buns  

Directions  

  • Preheat the grill (or smoker) to 450 degrees.  
  • Add the six bison burger patties in a bowl and use your hands or a meat masher to deconstruct them into ground meat.  
  • Add ¼ cup blue cheese crumbles, ½ cup buffalo hot sauce, celery salt, chopped celery, and red pepper flakes. Mix to combine.  
  • Reform the meat mixture into six even patties.  
  • Place the patties onto the preheated grill and grill for 4 minutes on one side, and then flip and grill for an additional 3-4 minutes, or until the internal temperature reaches about 135-140 degrees.  
  • Serve on brioche buns and top with additional blue cheese crumbles and hot sauce and enjoy!
