Good Eats: Homemade Wild Rice Soup Recipes

Previously, we touched on the history of Wild Rice in Minnesota and the importance it holds as our state grain. To follow up that post, your friends at Duluth Pack wanted to give you a classic Wild Rice soup recipe that you can make at home for the true Minnesotan experience.

Here’s what you’ll need:

  • Vegetable or chicken stock
  • Uncooked wild rice
  • Sliced baby bella mushrooms
  • 4 cloves of garlic
  • Diced carrots
  • Diced celery
  • Diced sweet potato
  • Diced small white onion
  • 1 bay leaf
  • Old bay seasoning
  • Butter
  • Flour
  • Milk
  • 2 large handfuls of kale
  • Salt and pepper to taste

This is a recipe that you can cook in many ways, but we will touch on cooking on the stovetop.

You’ll first want to heat a tablespoon of butter in your pot to get it ready. After this has melted, add your onions and sauté for five minutes on medium-high heat. Once this is soft, stir in the garlic for another minute or two.

Next, you’ll add your vegetable stock, wild rice, mushrooms, carrots, celery, sweet potato, bay leaf, and Old Bay seasoning. Wait until the soup reaches a simmer. Once the soup reaches a simmer, reduce the heat to a medium-low. Cover the soup and let simmer for another 45 minutes.

In the final 10 minutes of cooking, you’ll want to prepare your cream sauce. In a separate saucepan, cook your butter over a medium-high. Whisk in your flour and cook for one minute. Gradually add in your milk and stir frequently. Let cook until it is almost at a simmer and it is very thick.

Add your cream sauce and kale to your soup and stir. Add salt and pepper to taste.

Serve and enjoy!

One of the best things about this recipe is that it is extremely adaptable for any of your needs or wants. If you want to add chicken to make it a chicken wild rice soup, add it while the rice and the veggies are cooking. This is a great recipe when you are trying to stay vegetarian, and you can even make it vegan by using full-fat coconut milk instead of the cream sauce.
