It\u2019s so warm, so cozy, and so soothing during these chilly nights.&nbsp;Today we are highlighting four homemade soup recipes that are just to-die for. We hope you enjoy them as much as we do!&nbsp;<\/p>\n\n\n\n<p><strong>Easy Chicken Noodle Soup<\/strong>&nbsp;<\/p>\n\n\n\n<p>This Chicken Noodle Soup recipe will taste just as good as your mom\u2019s, but won\u2019t take nearly as long to make. It\u2019ll warm your&nbsp;soul and your belly, and it takes less than an hour to make! This recipe&nbsp;is from&nbsp;the website&nbsp;<a href=\"https:\/\/www.thekitchn.com\/how-to-make-the-best-chicken-noodle-soup-cooking-lessons-from-the-kitchn-178790\" target=\"_blank\" rel=\"noreferrer noopener\">The Kitchn<\/a>&nbsp;and will leave your house smelling fantastic. Here is a recipe for Easy Chicken Noodle Soup:&nbsp;&nbsp;<\/p>\n\n\n\n<p><em>Ingredients<\/em>&nbsp;<\/p>\n\n\n\n<ul><li>1 large yellow onion, peeled and diced&nbsp;&nbsp;<\/li><li>3 stalks celery, diced&nbsp;<\/li><li>3 medium carrots, peeled and diced&nbsp;&nbsp;<\/li><li>1 to 3 cloves garlic, to taste&nbsp;&nbsp;<\/li><\/ul>\n\n\n\n<ul><li>1 \u00bd pounds chicken thighs, bone-in&nbsp;(about 6)&nbsp;&nbsp;<\/li><li>1 bay leaf&nbsp;<\/li><li>1 to 2 quarts low-sodium chicken broth, divided&nbsp;&nbsp;<\/li><li>8 ounces dried noodles&nbsp;(noodles of your choice)&nbsp;<\/li><li>2 teaspoons vegetable oil, divided&nbsp;&nbsp;<\/li><\/ul>\n\n\n\n<ul><li>1 to 3 teaspoons salt&nbsp;&nbsp;<\/li><\/ul>\n\n\n\n<p><em>Directions&nbsp;<\/em>&nbsp;<\/p>\n\n\n\n<ul><li>Warm 1 teaspoon of the oil over medium heat in a Dutch oven or&nbsp;soup pot until shimmering. Add the onion, celery, and carrots with a pinch of salt. Cook, stirring occasionally, until the vegetables just start to soften, 3 to 5 minutes.&nbsp;&nbsp;<\/li><li>Clear a space in the middle of the pot and add the garlic. Cook until aromatic, about 30 seconds, then stir the garlic into the&nbsp;vegetables.&nbsp;&nbsp;<\/li><li>Remove the skin from the&nbsp;chicken thighs, but leave the bone in. (Note: boneless chicken thighs are also fine for this recipe, but the bones add richness to the broth.) Move the veggies to the edges of the pan and&nbsp;warm the remaining 1 teaspoon of oil in the middle of the pan.&nbsp;&nbsp;<\/li><\/ul>\n\n\n\n<ul><li>Add the chicken thighs, fitting them into a single layer. Cook without moving until the underside is golden-brown, about 3 minutes. Flip and sear the other side until golden.&nbsp;&nbsp;<\/li><li>Add the bay leaf and \u00bd teaspoon of salt. Pour in 1 quart of the broth. Bring to a simmer, then reduce the heat to medium-low for 30 minutes.&nbsp;&nbsp;<\/li><li>Move the pot off the heat and transfer the chicken to a plate with a&nbsp;<a href=\"https:\/\/www.duluthpack.com\/products\/epicurean-natural-spoon\" target=\"_blank\" rel=\"noreferrer noopener\">cooking&nbsp;spoon<\/a>&nbsp;and use two forks to pull the meat apart into shreds. Remove and discard any bones. (Note: it\u2019s okay&nbsp;if&nbsp;the meat is still a little pink in the middle at this point.)&nbsp;&nbsp;<\/li><li>Bring a separate pot of water to a boil for the pasta. When boiling, salt the water generously and add in the pasta.&nbsp;&nbsp;<\/li><li>Cook until the pasta is barely al dente \u2013 cooked so as to still be firm when bitten \u2013 and then drain.&nbsp;&nbsp;<\/li><\/ul>\n\n\n\n<ul><li>Return the shredded chicken to the soup and bring to a simmer. If the chicken isn\u2019t quite finished cooking, continue simmering until it has cooked through. Add the noodles to the soup. If a thinner broth is&nbsp;desired, add additional broth.&nbsp;<\/li><li>Remove the bay leaf. Taste the soup and add salt and pepper as needed. Remove from heat and allow the soup to warm you like a warm blanket.
